Thursday, July 25, 2002Acrylamide and potato chip linksThe highly publicized link between acrylamide , a potential carcinogen, and potato chips announced earlier this year has passed through peer review and is being published in the August 14 print issue of Journal of Agricultural and Food Chemistry. The study shows that acrylamides are formed when carbohydrates are cooked, with more forming at higher temperatures. The recommendation in the paper is that consumers should avoid overcooking carbohydrate-heavy foods. However, undercooking has its own set of problems such as Salmonella poisoning.Does wine make you healthier and why?Lots of studies have shown a correlation between moderate consumption of alcohol and reductions in cardiovascular risk, etc. However, there has not been clear evidence for a causal link. Perhaps both drinking and lower cardiovascular risk are caused by something entirely separate. A new study just published in the American Journal of Clinical Nutrition shows a correlation between alcohol consumption, especially of wine, and a healthy lifestyle. Men and women who preferred wine consistently consumed less saturated fat and cholesterol, smoked less, and exercised more than those who preferred beer, spirits, or had no preference. Although this study doesn't really clarify what causes what, it may be worth looking to see if a preference for wine is caused by an overall pattern that leads to better health. Sun lets off gasOver the past week, the Sun has sent out four of its most powerful class of solar flares. They pose no problem for communications, etc. on Earth because they were ejected from the far side of the Sun.You may be wondering how we know they happened if they're on the far side of the Sun. The SOHO satellite sits between the Earth and Sun and monitors waves in the Sun's surface. From this information, the dynamics of the far side of the Sun and its interior can be determined. It's pretty advanced stuff but if you're into it, you can read a recent review paper on helioseismology at the home of the latest physics research: the arXiv. Split cometA zoo of mini-comets has been seen streaming out the back of comet57P/du Toit-Neujmin-Delporte. Thermal stresses caused by the Sun's warming probably caused the breakup. Matter-antimatter balanceToday at the International Conference on High-Energy Physics in Amsterdam, researchers showed results that indicate the balance of matter and antimatter in the universe is exactly that predicted by the Standard Model of particle physics. A particle physics phenomenon called CP violation causes an imbalance between matter and antimatter. If the amount of matter and antimatter were equal, then a parameter from experiments (called sine two beta), would be exactly zero. However, the experiments show that the parameter is 0.74 +/- 0.07. This agrees with the standard model prediction of 0.72. The physicists obtained their data from 8 million B-meson decay events.
