Well, Eric’s Spicy Thursday was either a roaring success, or a failure, depending on your perspective. Eric succeeded in making some fabulously great carnitas enchiladas – mmm, pork and cream cheese – while I failed to do much of anything beside sit on my ass and eat fabulously great carnitas enchiladas. Reflection, I fear, was not a factor. OH, so Eric apparently had a bit of a problem buying the scallops the other day. Seems that he left the first set of scallops in his office fridge, and had to buy another set for me to cook with on Wednesday. Which means that, unless they have gone the way of all good scallops, I have another set of scallops to cook, and no more scallops recipes! Egad! But no fear, I have done a bit of deep research, and it turns out that in the Entrees and Luncheon Dishes chapter there’s something called a Timbales de Foies de Volaille, or unmolded chicken liver custards. What’s that to do with scallops, you ask? Why, look in the variations, and lo, you can make it with scallops! So that’s what’s on the plate for this evening. Unless, of course, the scallops are a rotting mess in the bottom of my refrigerator. This seems as good a time as any to say a few thank-yous. Thanks to Michel Vuijlsteke. I think. My Dutch (is it Dutch?) is a little rusty. And Pete, a little bird told me, linked to me yesterday, making some snotty comment about how I used to eat nothing but twix bars. Thanks Pete. I'll return the favor just as soon as I can....
