A late night for me at work, so we made Wednesday Eric’s Spicy Day.  He made cheese enchiladas with Chimayo red chile sauce.

You should all know that Chimayo red chile sauce is one of the great perfections the world has to offer.  It there were a god, his existence could be proved by Chimayo red chile sauce.  Interesting.  Most of the valid reasons I can think of to believe in God involve food.  The combination of tomato and basil, for instance.  Or the slice of pecorino cheese drizzled with honey that I was once served for dessert that made me want to cry for happiness.

Tonight, no more excuses.  I’m going to push through this flimsy exhaustion and ennui, and the Julie/Julia Project will go full throttle – Soupe a l’Oeuf, Provençale, Gratin de Poireaux, and if I’m really feeling wild-n-crazy, a bit of Bavarois Praliné.   That’s garlic soup with poached eggs, leek gratin, and almond Bavarian.

I remember the last time I tried to poach eggs.

This should be fun.
