The prodigal blogger has returned.  After several days of R & R, or at least Mexican food and Texas heat, I am back, ready to hit the homestretch.  With 72 days to go and a scary number of recipes, which number I’ll report as soon as I fire up the courage to open up the book and do a count, it’s going to be tough going, especially as I have yet to go cassoulet and offal, not to mention Pate de Canard en Croute, a dandy little number I just rediscovered after burying it deep in my subconscious in a desperate attempt to stave off despair, which entails boning a whole duck, stuffing it with homemade pate, and wrapping the whole thing in a pastry crust.  I’m going to need a whole new kind of energy for this.  Possibly crank.

It’s going to be a ham and soufflé kind of week.  If anyone knows of any churches or homeless shelters in the NYC area willing to accept meat hunks of unknown provenance, let me know, because I’m going to have to dump some of this stuff.  My only worry is that after months of malnutrition, Ham Braised in Wine with Cream and Mushroom Sauce will send some poor soul into instant toxic shock.

Well, I’m off to the wars for now, but tomorrow I shall relate tales of the oozing sores earned during my first day back in the saddle.
