A case of insomnia this morning led to some very early canning before work. All the computers were tied up doing "overnight" video rendering and no time could be spent surfiing for news, reading sending emails, etc. - so I decided to can the fake V8. It must have been a good time, all eight pints sealed coming right out of the canner. There wasn't enough time for an hour in the pressure canner, plus the time warming it up, cooling it down and all that, so I beefed-up the acidity with lemon juice and will make sure it gets refrigerated and consumed quickly. At any rate, it was all done by 5:30am and I managed even to get to work early.

I've started getting the Durham Herald Sun this week and all the food ads come at once. Lowes has pork loin on sale at $1.77/lb., so it looks like a good weekend for jalapeno/cheddar sausage. Last week's Splendid Table on MPR (M = Minnesota, that's correct) refeered to a book on preserving that I could not find on their site. It is at Amazon, it is Mes Confitures: The Jams and Jellies of Christine Ferber. It is waiting there until I accumulate enough items for free shipping, which won't be until at least October 1, when Mark Knopfler's Ragpicker's Dream is released (also part of the growing order).
