("Takes the Gas out. Here's another way way to take gas out out of dried Beans. Soak beans in water for 3 hours, drain and cook in fresh water for 30 minutes. Drain this water and cook until beans are done. There is only a slight nutrient loss")

Another good source of information about food, before there was an internet, was the county extension agent. Neighborhood meetings were primarily social, but also served as a forum for the exchange of practical advice for canning and preparation of "troublesome" foods. I'm not sure whether the scientific method was used to determine the worthiness of this technique. Who did the measurements and what about the families of the control group? Anecdotal evidence is probably sufficient when the problem is not genuinely threatening and you're willing to try anything. It was a bit of a surprise to me to see how similar this method is to the one I use: Wash & sort, boil, allow to stand covered one hour, drain & rinse, boil again, stand again, then cook for real with stock and seasoning.
