Nothing much happening in the kitchen today. Early this morning, after the bluefish had rested overnight at 125F in the smoker, I hit them with a good two-hour burst of alder wood smoke. Took them out of the smoker just before driving through the sprawl to work. While I was gone, they waited patiently for me in a cold oven, lights out, where the cats would not be tempted by them. They'll spend the evening in the refrigerator (not the cats!), then be vaccum-sealed. Smoked this way, fish retain more moisture than most store-bought smoked fish have.
