Okay, now I get it...Whispering Hope...Simmering Duck. The stripped duckling bones, the neck and tail, gizzards and liver (didn't fry it) are simmering with a bay leaf. a couple carrots, a couple ribs celery, and seasonings to become duck stock. Incredible aromas, like gentle persuasions, fill the kitchen. This is why we cook. Eating is easy, as fast food and its huckleberry friend fast obesity, have proven. Paraphrasing Edison, cooking is 90% preparation and 10% inspiration. Unlike Edison's sweatshops, however, the aromas in the kitchen are sweet perfume.
Remember my 5.54 pound Maple Leaf Duckling with discarded orange sauce packet? The ground duck meat yield was 1 pound, 6 ounces. That orange sauce packet probably weighed about 6 ounces. There was easily a pound of skin and fat. The rest went into the duck stock. The percentage of prime duckling meat represented in the gross weight is 24.8%!
