Dunno - they sounded good when I ordered them from Sendexnet, which will soon be a link on the left of this screen, along with Tienda who will send you an appetizing foodie email newsletter about Spanish food - which they sell at decent prices from an incredible array of tasty selections.

It looks as though the power situation is stabilizing in North Carolina. Only one Duke Power reboot since 6pm. That means I can get back to writing about food.

Foremost on my mind is Pão de Queijo, Brazilian cheese bread which uses manioc flour. The linked recipe uses mashed potatoes to overcome a poor rise, which is similar to pumpernickel. The cheese used here is Parmesan. The recipe also calls for milk, but doesn't mention that scalding it also complements the rise.

The recipe calls for polvilho, which is a manioc starch - probably not the same as somewhat grainy manioc flour I purcheased from Sendexnet. I suppose I could just order a cheese bread mix. Maybe I should, just for comparison.

Thanks to Leah, who emailed me about this manioc specialty, and also inspired me to put on Roy Orbison's Greatest Hits for Liz when she came over for farofa and steak on Saturday. Like Uncle June on The Sopranos, we would not be convicted by a jury of our peers because we also lit up the stereo with Ray Charles' smokin' version of Still Crazy After All These Years to commemorate Paul Simon's induction as a 2002 Kennedy Center Honoree.
