Cherry Stoner

Last year, I got a heckuva deal on a bunch of Bing Cherries. Couldn't resist. Then I got home and realized they had to be pitted. I wasted a good part of a day checking out hardware stores and kitchen stores looking for a cherry stoner. Never found one. I got the stones out of all the cherries, but this is not the kind of prep work I enjoy, especially when I know there's a tool to make it easy. It's nowhere near cherry season, at least not anywhere near here, but I went ahead and ordered one today from The SausageMaker so it will be there next time I get a wild-assed impulse. They cost $20.95

(although, in the spirit of today's music, I presented a picture of a cherry stoner, I decided against developing the theme with a graphic representation of a chicken boner)

Methods (scanned from May 2003 Gourmet)

  1. A long-handled fork is the tool of choice here.Working with one pastry strip at a time, carefully slip one third of a strip into 375F olive oil. Holding fork almost flat, slip pastry strip between tines of fork.
  2. Twirl fork (think spaghetti) as pastry starts to puff, tilting fork upright. Continue to twirl, gradually lowering uncooked portion of pastry strip into oil.
  3. Use a regular fork to finish curling last bit of pastry into a loose spiral. Turn spiral over with both forks and fry until golden brown.

These are used in a recipe for Fried Pastry Spirals with Honey, Sesame, and Walnut.
