
This fat separator is fragile. Plastic ones are not. When you decant from it the angle of the spout is still so nearly upright that liquid runs down it and drips off the bent portion near the flask. Those cheap plastic ones have straight spouts at a 45-degree angle - so they work fine, no drips.
I got this one at Williams-Sonoma and paid dearly for it. It's kinda cool looking, like a graduated beaker. It really sucks at doing the job for which it was designed.
That's my long-cooking stock resting in it. The stock looks pretty good, better than it would in a plastic fat separator. Get one of these if you want to take pictures; get a plastic one if you want to separate fat from your sauces.
