Margarita cake

 

My friend Eric brought a slice of this over to me as a bribe yesterday. It worked. I asked for the recipe and he gave it to me. Eric is what I call a “free-range baker”, using whatever seems to fit at the time. Everything fit together perfectly on this…

 

Batter

 

1 package Duncan Hines orange cake mix

1 package instant vanilla pudding mix

4 eggs

½ cup vegetable oil

½ cup water

¼ cup lemon juice

1/3 cup tequila

¼ tablespoons triple sec liqueur

 

Glaze

 

1 cup confectioners' sugar

1/3 cup tequila

¼ cup triple sec liqueur

¼ cup lime juice

 

         

Directions

 

1. Preheat oven to 350 degrees F. Grease and flour a 10 inch Bundt pan.

 

2. In a large howl combine cake mix, pudding mix, eggs, oil , water, lemon juice, tequila, and triple sec. Beat for 2 minutes.

 

3 Pour batter into prepared pan. Bake in the preheated oven for 45 to 50

minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool in pan for 10 minutes; remove to rack and pour glaze over cake while still warm.

Whose Computer Is It Anyway?

Good article on the spyware that is likely clogging up your system, like cholesterol in arteries. It does not give free remedial action, but I have. See my article Tune Up!. I have seen computers with as many a 500 spyware infections! Naturally they run very slowly and are especially slow online, where they are sending your private information to only God knows where. Some of them load more spyware. Get rid of it - for free!
