Some loose ends

 

Word got out at work that I had made a margarita cake and I’ve already committed the one I made Saturday to the Armadillo crowd. Looks like I’ll have to make another. Luckily, Food Lion has Duncan Hines Orange Supreme cake mix on sale for 99 cents this week. I picked up two boxes. The recipe calls for instant vanilla pudding, but I got one box of lemon too – can’t resist the urge to experiment. Like with the “filling.” I used a syringe to inject an extra ¾ cup of tequila and triple sec into cake #1 on Sunday morning. It has aged two days and is ready to consume.

 

I made my own crème fraiche for the onion and bacon tart. The first attempt was a total disaster. The heavy whipping cream had one of those spread-to-open tops and it just wouldn’t open. I didn’t realize that I was squeezing it as I tried to pry it open and suddenly the cream spurted out and onto the carpet. That was a nasty mess to clean up and I had to go buy another pint of cream. I cut the top off with a scissors on that one. While searching the web for alternative methods of making crème fraiche, I ran across Deb’s experience with it on MurrayHill5. She added vanilla to her batch and also had a “minor mishap” – she spilled a little bit of the finished product. I had a major mess, cream on the floor, carpets, and even on the cabinets. Is there a crème fraiche curse?
