Not a lot to say about it now, it's finished. It spent about twelve hours in a 210º F smoker with apple wood to get to this point. I drank all the cider that didn't go into the marinade and got drunk. All in all, it was a worthwhile day.

pssst...the turkey is really hanging from the shower rod in the spare bathroom. I cut it out of that picture and pasted it over Niagra Falls so Liz doesn't find out.

Strange Brew

The FrankenTurkey saga continues. This head is the result of pouring a bottle of Hornsby's Draft Cider into a cup or so of reduced turkey stock. This mixture is also seasoned with kosher salt, white pepper, coriander, and ginger.

The turkey marinated in a similar mixture overnight, but this batch was injected right into the turkey (it's not a good idea to inject used marinades, especially for poultry). The turkey is hanging out to drip dry while I warm up the smoker.
