This is a "bain marie." The expression is from alchemy and is named for Moses' sister Mary, who dabbled in alchemy. It literally means "Mary's Bath."
After 3 hours, the cheesecake finally got "puffy" - but not a hint of brown. I'll settle for puffy. In the past, I've ruined cheesecakes by underbaking and I've sworn to never let that happen again.

NY Cheesecake
I'm making one of these right now. Liz, never a big fan of desserts, left just before this was served to see her son who works at a restaurant around the corner.
The recipe says to bake this in a bain marie until brown, about two hours. The cheesecake pictured is obviously not browned, but I'm giving it an extra 30 minutes (recipe says 2 hours at 250º F) to make sure it's at least done. In the past, I've given cheesecakes an extra hour.
The recipe also specifies using saran wrap and aluminum foil folded from a cross shape to protect the springform pan from leakage in.
