The label (and the price!) of this said it was leg of lamb, but unless lambs have ribs in their legs this is lamb chop. Roasted most of the day at 200ºF, it’s now at 145ºF internal and will go to 160 in a 425ºF oven where the potatoes are roasting right now. It roasted on a bed of chopped onions, which are enhancing the roast potatoes.
