Top: Veal Breast Pocket. Yup, that’s what it said on the label – bet you didn’t know that veals wore Brooks Brothers suits. As you can see, it’s a bony cut – and cheap (6 bucks for this 4-pound slab) – perfect for stocks and broths. So I cleavered it to manageable pieces. Browned them, and put them in the pressure cooker for a 60-minute man broth. Standard mirepoix stuff joined the veal. Liz and I watched Does Humor Belong In Music and a hilarious Billy Connolly docucomedy: Erect For 30 Years.
Bottom: Some bagged frozen vegetables cooked in the veal stock makes a decent soup. Liz is headed back to the UK tomorrow to spend a month with her Mum.

No, it wasn’t my cooking, not this time. Liz spotted a fire in the dumpster outside when she came over around noon. She ran to the phone and called 911. The fire truck pulled up shortly after I got outside with the camera. Thanks to the Carrboro Fire Department!
