Then, after 45 minutes for each side being up, the London broil will be flipped once more, covered with foil, and retired to the fridge for more processing tomorrow.

So, after 24 hours relaxin’ in the marinade, the London broil heads to a 360º oven to braise a while. About 45 minutes, flip it, and back in until it browns on top – about another 45 minutes.

Honesty, Service, and Quality

 

It is our goal to continue the tradition of honesty, service and quality that people have come to expect from Durdel's well into the next century.    We appreciate our many loyal customers for whom this brief history may have rekindled some fond memory of their "first" from Durdel's.

 

I was one of those customers, though I am no longer a musician.

 

I am also a dumbass. I met Fred Shuman, the current owner, at Durdel’s last April. I had made a visit to this store a top priority of a trip to Toledo because of the many fond memories I have of it. I wrote about that on my blog and got Fred’s name wrong – confusing him with a name of a guitar teacher from a card I’d picked up there.

 

Don’t get me wrong; I respect guitar teachers and all music teachers with an esteem I’d otherwise reserve for guardian angels. I once was a guitar teacher. No, I regret it because Fred and Alice Shuman are following in the tradition of Cliff and Ruth Durdel in providing honesty, service, and quality to musicians and other dreamers who are the soul and future of America. There is no infrastructure to encourage the arts, it takes people like Cliff, Ruth, Alice, and Fred.

 

And I screwed up his name. I’m hiding under a blanket. It’s a blue blanket. Forgive me, Fred, so I can come out again. When I come up to Toledo again in April, I'd like to buy a maple Telly with that funky knurled knob that switches between the pickups. We'll negotiate on shipping (I don't trust the airlines to bring it back to North Carolina). I've always wanted a Telecaster and one from Durdel's would be the absolute very best. 

 

Mostly blonde, the rest all maple, hard shell case, made in the good ol' USA, not Mexico (I have no Norteno asiprations, even though I love the music) , and it's a guaranteed sale. I stake my honor on it. I've always wanted one of those. Strats are for sissies like Jimi Hendrix. Real men play a Telly. Life is short, play loud!

After 12 hours in vacuum enhanced Stubbs, the London broil gets flipped. Later, it will be braised in the marinade. It has been poked multiple times with a fork to get the marinade all through. That’s probably redundant. This will be eventually cooked down to threads of beef.
