More hunting & gathering. All critical ingredients have been located and acquired! Only the fresh produce (cauliflower, romaine, radicchio, Swiss chard, parsley, etc.), which will be postponed to the last possible minute, is left to buy. I’ll pick up the fresh turkey at Cliff’s Market early Tuesday.

 

Following the prep outlined in the November-December 2004 Cooks’ Illustrated, the turkey will be brined 4 hours, then patted dry and left in the fridge for a day to let the skin get nice & dry for better crispiness. Then on to the Gourmet recipe.

 

Hardest items to track down? Golden raisins, for one. I had to go to 5 stores to find them! Likewise sherry vinegar. But the most difficult was unflavored gelatin, carried by only one store – coincidentally the same store, right across the street, that had pomegranates but no rye flour.

 

I also made the cranberry jam for the tart this morning. I followed the procedure in Gourmet and it worked just fine. I had reservations about forcing hot jam through a sieve. It was slow but worked out. I added the orange zest, as promised, to give it something a little extra.

Okay, this is silly and first thing you might wonder is why I have both of these. I couldn’t find my subscribed copy yesterday when I was making up the shopping list. I looked all over for it and finally gave up and bought a backup – critical, since this is the blueprint for T-Day. Later the original magically appeared atop my dryer. Wonder which one of the cats put it there?

 

The newsstand copy screams out its features at you. The cover is glossier than the subscription one, which is generally more subdued. All this makes sense because the newsstand copy must be an advertisement for itself. What doesn’t make sense is that the subscription copy is 1/8” shorter. Can anyone explain this mystery?

Kenneth, what is the frequency?

 

You can usually find an NPR station while you’re driving in unfamiliar territory just by fiddling with the “seek” button. Most of the stations are in the 88.1 to 92.0 range (a few, like WSCN (100.5) in Duluth, MN, are exceptions). Well, now thanks to the NPR Station Locator (48K printable PDF file), you can plan your frequency switchovers at the same time you plan your trip!

Seeing that option magically appear at the bottom of Radio comments last week, I thought “Good!”

 

I don’t get many abusive comments and wouldn’t be inclined to censor them if I did. However, on more than one occasion, a commenter has emailed me asking to have a specific comment removed. I will do that now. More often, I’ll use my new power to eliminate duplicate comments from people who pushed the “Submit” button twice while waiting for the window to refresh. No Windows hourglass appears unless you move the mouse pointer to the top of the window, so it’s been  a natural impulse – “Did I push the button?” Now that can be fixed.
