These are just cremini mushrooms, but they look nice. They be combined with the Espagnole sauce to accompany the tenderloin.

This is kinda dumb, but I’ve discovered a new chopping trick. I’ve been using this plastic “cutting boards” for a couple of years now. They move when you’re chopping on them and I solved that problem by leaving them wet of the bottom after rinsing them. Surface tension, I guess it is, holds them in place. I didn’t do that today as I was chopping parsley, celery, and scallions for the oyster Rockefeller. So naturally, the cutting mat moved as I was mincing – you know, using that rocking motion to cut while your left hand secures the tip of the blade. If I held the blade at a slight angle with the cutting edge forward, the entire mat would move forward after each chop. You can control the feed rate with the angle of the blade! When it is nearly vertical, only a few millimeters of the stuff being chopped moves under the blade. At a greater angle, say 15º, it moves about a quarter of an inch.

Like Sara, I had no 1 ½ inch biscuit cutter and, again like her, refused to go out and buy one for the canapés. I found fun shape pie dough cutters in a drawer and used them. They might be too small, but if I can get the topping on with a pastry bag, these will be the crusts for my canapés.

Artie Shaw held out until 94 because he knew everyone would play Begin The Beguine when they read his obit on NPR. He came to hate that tune, even though it gave him his big break. It probably made him feel one-dimensional. He was a cultured man of depth and conviction, who happened to like pooching actresses.
