Large chunks of animal flesh, continued…

 

This pork shoulder will be roasted just like the last one – marinated overnight in a spicy annatto mix, then roasted 3 ½ hours in a bag. Sister Ruth and Sister bubbles are both arriving tomorrow for a visit and we’re going to have Cubanos at least once. I’ll probably do a ham too – like the pork shoulder, it’s on sale. Might even do ‘em both at the same time. Maybe some sourdough buns too? Not traditional, but my neither is a Tampa Cubano, if you believe the 3 guys from Miami.
