A garlic crouton under the broiler – the grocery had fresh fava beans this morning and I hooked up with this recipe for fava bean soup over at Saveur. It has a base of onions, garlic, and leeks with a bit of tomato paste thrown in at the end of the caramelization phase. Then you add chicken stock and a couple of diced potatoes, cook it about an hour, mash it up, and add the favas. The crouton goes in the bottom of the bowl and then you ladle over the soup. The last issue of Saveur has a whole section on favas, but I left that at work and had to pull down something with Google.
This is a Mothers’ Day soup for Liz, and a happy Mothers’ Day to all those out there to whom it applies! We’ll have roast chicken to appease the carnivore in us after the soup. Hey, did you know you can kill flies with Windex? Wait until they light and then douse ‘em. They walk in circles a while and then croak! Better than fly spray, especially in the kitchen.
