
Mr. Preston, if you’re reading this, you’re right. It takes sourdough at least 6 weeks to mature. The batch I made in late March is just hitting its stride. These loaves only took 6 hours to rise – 2 in the sponge, 2 in the proof, and 2 in the loaf. The dough doubled in size at each stage, just like the Good Book says. I knew these were going to be very special loaves after the proof, so I took extra care in the final stages. I rolled the dough out into a thin layer, misted the surface, and rolled them up. I think they liked that.
In the back there, you can see ‘Ove’ Glove’s new girl friend, a standard oven mitt decorated with pictures of hot peppers. ‘Ove” is a worldly guy, it even said on his packaging that it takes a lot to get him hot, but he and Maria got right down when it was crunch time. I couldn’t have got these loaves out of the oven without their help. What they do in their spare time is their own business.
