If you mix Worcestershire and soy sauces half and half, spice it up with – yeah, I know – onion and garlic powder, any other ingredients you add to the marinade are just variations of the classic jerky recipe of Rytek Kutas, the wurstmeister’s wurstmeister, Dense, dark, somber, explosive flavor, everything a preserved meat should present to the palate. I add garam masala and Tabasco.

Ruffian Flashback
Watching the Preakness today, without congratulating myself, I’ll have to say I had a premonition. Seeing Barbaro easily pull away from the field in the stretch at the Derby, the sheer power in those forelegs, I knew I was watching one of the greatest. I remembered Ruffian on July 6, 1975 – and I am not alone – today when Barbaro broke early from the gate. Achilles Heel. Herb Score hit in the eye by a line drive off the bat of Gil McDougald on May 7, 1967. Greatness terminated by one twist of sinister fate. It never feels good to see it. I won $70 on the race pool today, having drawn – not by picking – Bernadini in both pools. It’s as tainted as 30 pieces of silver, but the cool thing about cash is that it has no memory. It doesn’t care why it exists or whose hands hold it. On it, it says “In God We Trust” and sometimes we’ve got to. There is no explanation for any of this nonsense.
