That work can take many forms, from a dangerous and eye-threatening lye bath to a gentle long term soak in a brine mellowed with celery, lemon, Serrano peppers, and garlic, like the mysterious Nonno suggests. Nonno says this will take 6 months. I put them in these jars today, November 1, meaning my olives will be finished on April Fools Day.
I can hardly wait.

The freshly picked olives from Penna have arrived! I’ve never seen an olive in this state before – need a bit of work they say…
