But the surprisingly understated star of the show was this pumpkin/avocado guacamole infused with pomegranate seeds, onion, and Granny Smith apples. “It’s okay,” we kept saying, not too impressed, and then we’d dip in another chip. Soon, it was all gone.

Before it became soup, or whatever, it looked like this as it was absorbing heat produced by electricity passing through highly resistant coils conveniently placed atop my stove. I probably couldn’t make stuff like this if they’d mounted the coils on the side of it.

So, anyway, this was the main course for a Mexico-inspired (don’t tell Lou Dobbs!) Day Of The Dead, never to be confused with George Romero’s Night Of The Living Dead, and it happened to coincide with Halloween week. What’s in the Pozole is dead shrimp, dead clam juice, dead Spanish onion, you get the idea, garlic, tomato paste, chopped tomato, and sliced zucchini – served with a side of Romaine, radish, and red onion. Not bad.
