What's For Dinner?:  Low Carbohydrate Bread -- Results of second attempt

After one hour rise (Bottom photo)

After 10 minutes in the oven at 350F deg. (Next to bottom)

Done, at 37 minutes into baking; definitely needed shorter baking time (Next to top)

Slight change to this recipe, replacing 1/4 cup soy flour with 1/4 cup high gluten flour yields a bread with lighter flavor and somewhat chewier texture.  It's a keeper; slobbering happy spouse says I'm now his "bread b*tch".  No, I don't think he meant "witch".

What’s For Dinner?: Low Carb Bread – second attempt

Since I don't yet have a French loaf pan, I'm using our trusty 13x9 pan with a cobbled up solution.  One sheet of aluminum foil with a large, folded crimp down the middle, sprayed with vegetable oil will probably do the trick. (Top photo)

The dough, as it emerges from the bread machine, post-kneading; looks deceptively easy, yes?  (Middle photo)

The final loaves, dusted end to end with a little high-protein flour for appearances.  This stuff really puts up a fight forming long narrow loaves like this; it's the protein content that makes the dough quite stretchy, like a rubber band that wants to snap back to its original shape.  Once the dough stops fighting, it doesn't want to make a smooth surface, either.  Oh well.  Probably a limitation working with this dough. WTF?  Hey, you’re either in school learning or you’re playing someplace else, at least in my neck of the woods.  In either case, you won’t find a pic here of educators in the buff, instructing or otherwise.

Happy Father’s Day

 

To our fathers, whomever, wherever, from sons and daughters everywhere.

 

This household will be short one Father’s Day greeting today, unless there’s access from a satellite phone somewhere north of Tikrit in Iraq.

 

We won’t be far from our phone, in case a call does make it here.  But we’re not holding our breath; the odds are quite slim the first-born of this household’s father will be calling today.

 

There are many more fathers and children all over this country, who won’t get calls or won’t have a phone number to dial.  We’ll be thinking of you today.

 

Here’s hoping your phone calls get through, receiver or sender, on this Father’s Day.
