Last night, I was set to make Pork-stuffed onion cups with mango chutney for dinner. I was excited, and brought it up with my wife expecting she'd be just as excited. But I had forgotten her last few experiences with onions. I won't be cooking stuffed onions again for quite some time.

To overcome my disappointment, I decided to borrow from that recipe and make some pork burgers on the Weber. I mixed up 1 3/4 lb. of ground pork with an egg, a few shakes of fish sauce, a few turns of the black pepper grinder, panko, and a 2 pods of star anise ground in the spice grinder with 1/2 tablespoon coriander seeds.

I formed the meat into three large patties, and grilled them over a combination of lump charcoal and hickory chips. Given the thickness of the patties, I used my instant read to make sure each was at 140° before serving on toasted whole wheat buns with cheddar cheese and mango chutney. Eaten with a Dark and Stormy, the burgers succeeded in chasing away my disappointment.
