There is a capon roasting away in my oven. Every recipe I consulted said to roast it for a different amount of time at a different temperature. I am giving the Joy of Cooking one final vote of confidence here and using its method. If it fails me, that book is losing its space on my kitchen shelf.
I let you know how it turns out; I even made a stuffing from scratch. Had to do something to celebrate the fact that it's fifty degrees in Minnesota on January 7th.
