The recipes one finds in women's magazines are normally the culinary kiss of death. (Jaimie Oliver says there is no such thing as a good pasta salad, no matter what the women's magazines say, and I'd tend to agree.)
I don't know why this is so. Are the food editors, if there are food editors, so harried to produce content that they forget to eat the food or try the recipes? Are they so worried about their figures they're afraid of producing something tasty?
However, the other day, I stumbled across a shrimp & avocado tortilla pizza that looked simple & delicious, and in fact, turned out to be simple and delicious.
Just coarsely chop up about 12-16 oz of pre-cooked shrimp, mix this with a chopped avocado and juice from one line. Take a flour tortilla, oil one side, throw the shrimp-avocado-lime mixture on top. Sprinkle with a little cheese and throw onto a baking sheet and into a hot, 450 degree oven for 5-7 minutes.
Tortilla Pizza probably won't be added to the dinner repertory, except maybe on harried days, but there is a lunch repertoire to consider too.
I have a feeling that many leftovers from supper will find their way onto tortillas the next day.
