Second time around
This past weekend I made my favorite salad to take to a get together. As always
happens with this salad, I was asked for the recipe. It seemed like an easy request
since I had posted the recipe on MSCLL two summers ago, but when I sat down and
tried to find it, I realized that it was almost impossible. So, instead, I am
re-posting it for all those who asked, and all of you who missed it the first
time.
Believe me when I say this is the prettiest and the best tasting spinach salad
I have ever had. It is great in the summer (very refreshing), and also very
festive at Christmastime (red and green). The recipe calls for two bags of spinach
(a huge salad!), so the first thing I did was cut it in half. I would have posted
it that way for you but it made all the fractions wonky. So I am leaving it
to you to cut it down to the size you want.
Spinach and Strawberry Salad
1/3 cup vinegar
3/4 cup sugar
1 cup light oil
1 teaspoon salt
½ teaspoon dry mustard
1 Tablespoon minced onion
1 ½ Tablespoons poppy seeds
8 oz. pecans
2 bags spinach
16 oz strawberries, washed and sliced
Toast pecans at 300 degrees for 15 minutes (salt to taste). Wash spinach. Clean
and slice strawberries. Blend first seven ingredients for dressing. Toss dressing
into salad right before serving.
