Here is the frozen mocha dessert I made for our Memorial Day picnic:

This was out of a magazine called "Every Day Food" I picked up in the checkout line at Harris Teeter one day. It's put out by Martha Stewart Living. This dessert was on the cover. How could I resist? The dessert was easy, once I got the ingredients. Sure, the mascarpone cheese, instant coffee powder and chocolate chips were a snap. But the chocolate wafer cookies did not exist. I think they were thinking of chocolate Nilla wafers, which I could have sworn I saw at one grocery store. But they were nowhere to be found. 3 grocery stores and 1 Target later, I finally decided to just buy Food Lion chocolate sandwich cookies, unscrew them and scrape off the frosting. They worked fine. Maybe while Martha's in jail she can think about how hard it is for ordinary people to buy the ingredients for her recipes!
So the recipe...you basically take mascarpone and cream cheese, or all of one or the other, (I used a combo, since I needed 11 ounces and the mascarpone came in an 8 oz tub and I could buy a 3 oz package of cream cheese) and you whip it with sugar. Then you fold in whipping cream that you whipped to a soft peak. So now you have a base. In a third of that you mix some toffee bits, in the second third you mix cocoa powder and melted chocolate chips and in the last third you mix instant coffee that you've dissolved in a bit of water. Then you layer it in a cake pan with cookies in between layers.
Yesterday that "stuff" hit the fan at supper time. Nate blew a gasket about the stir fry. "WHY CAN'T WE HAVE MORE MEAT? I NEED MORE MEEEEAAATTTTT! CAN'T WE HAVE MEAL THAT'S ALL MEAT FOR ONCE? THIS IS TOO MANY VEGETABLES!"
I kind of had an idea that this might happen. I've been cooking almost exclusively from the farm produce and haven't done much meat lately. So, today I'll go buy some ground chuck and make some huge burgers for supper.
