
Thanks to all the rain we've been having lately, my garden is now chock full of parsley (which for some reason, the neighborhood band of basil-eating bunnines has decided to ignore.)
So I think it's time to start thinking about making a batch of herb butter.
From A Handful of Herbs:
"Simply beat your favoirte herb into softened butter, add a little pepper or lemon juice, cover with plastic wrap and chill until ready to serve."
