
How's this for something cool and refreshing:
Watermelon and Arugula Salad
Mix 8 cups cubed watermelon with 2 t. fresh oregano, 1/2 red onion (thinly sliced) and 8 cups baby arugula.
Whisk 2 T. white wine vingar with 1/3 cup extra-virgin olive oil, kosher salt and fresh ground pepper to make a light dressing.
Toss gently (so as not to crush the watermelon cubes). Sprinkle with 3/4 cups crumbled feta cheese and serve.
