Dr. Omed says it best:
"...Learning to make bread properly is not a science, it is an art...Bread is a living thing. Hand mixing and kneading are necessary...It is much like learning to be a good lover..." (Read his entire comment on my Oct 2 post.)

So that settles it.

No expensive KitchenAid mixer. At least not until I've developed the "touch."

Deborah Madison, by the way, says the same thing in "Vegetarian Cooking for Everyone." And she agrees with Dr. O in recommending a ceramic bowl for mixing. (It helps hold in the heat.)

So instead of a big honker KitchenAid, I'm going to see if I can't find a nice, heavy ceramic bowl.

Maybe one that's handmade?
