
Soup's On
The last of the CSA veggies were waiting for me when I got back -- lots of them (including, surprise surprise, more sunchokes!), so this weekend I'll be cooking up a big batch of vegetable soup.
My soup guru, at the moment, is Barbara Kafka. I've made several of her soups, including a fabulous "Curried Acorn Squash with Apples" that calls for fresh ginger.
I'm going with a chicken stock base for this weekend's cut-it-all-up-and-throw-it-in-the-pot variety. The veggies will be mostly summer squash and string beans and celery and onions and carrots and oh yes, potatoes, of course, and tomatoes and a bit of turnip and maybe some butternut squash.
(The sunchokes, I've discovered, are best roasted.)
