
Diva's Indian Delight
The Dinner Divas made an awesome Vegetable Curry Soup last night, using the recipe from Barbara Kafaks's Soup: A Way of Life.
Grind together:
2 t. ground corriander
1/4 t. anise seed
1/4 t. celery seed
1/4 t. yellow mustard seed
1/4 t. cardamon seed
1/4 t. ground cumin
Pinch of ground cinnamon
2 small dried hot red peppers
In a large saucepan, heat 2T vegetable oil. Stir in the spice mixture plus 1 medium onion (diced) and 2 cloves garlic (smashed, peeled and finely chopped). Cook over medium heat, stirring, for 2 minutes, or until fragrant.
Stir in 2 cups tomato juice, 2 cups water, 1 medium sweet potato (peeled and chopped) and 2 small carrots (peeled and sliced). Bring to a boil, then lower heat and simmer for 15 minutes, or until carrots are tender but not mushy.
Add 1 small head cauliflower (florets only, about 2 1/2 cups), 1 small head broccoli (florets only, about 3 cups), 3 small ribs celery (sliced), 1 cup tomato sauce, and 1/4 lb. white mushrooms (sliced). Return to a boil, then lower the heat and simmer for 6 minutes.
Stir in 1 cup water and 1 cup peas (if using frozen, defrost first). Return to boil. Lower heat and simmer for 8 minutes.
Remove from heat and stir in 1 1/2 T fresh lime juice. Add 2t kosher salt and pepper to taste.
Serve over rice and add a some good yogurt.
