Leek and Potato Torta
I'm posting this for Poppy! My Gramma made this dish every Sunday morning after Mass.
Ingredients:
Enough pie crust dough for a bottom and top crust of a 9 by 13 inch glass pan. It's best if you make your own dough.
6 T butter
6 large leeks, trimmed and thinly sliced (approx. 6-7 cups)
6 T heavy cream
1/2 t gound nutmeg (or grate fresh nutmeg)
1/2 t salt
1/2 t pepper
3 large cooked potatoes peeled and thinly sliced
4 eggs, beaten
1/2 C milk
Preheat oven to 375.
In a large skillet, melt butter and add leeks and saute 'til softened, about 10 minutes.
Stir in cream and spices and cook stirring occasionally until thickened, about 2 minutes. Add potato slices. Stir. Let cool, then add beaten eggs and milk.
Roll out half of the pie crust dough and squish it into the buttered pan. Spoon the leek mixture into prepared crust. Roll out the top crust and crimp edges around the pan. Poke the top with a fork in a fancy design - a flower if you want to be like my Gramma.
Bake until filling is heated through and crust is golden, about 45 to 50 minutes. Cool slightly before serving. Cut into squares and enjoy!
