Recipe of the week -- Better than TV Banana Bread



That's right, my three year old would rather bake this than watch TV. This is not my first banana bread posting; rather, the result of a happy accident involving cleaning out my (scary) freezer, Dido losing his TV privileges as the result of some particularly egregious tantrum throwing, and my continuing, obsessive need to change perfectly good recipes. But really, this might be my favorite banana bread ever.

1 c. all purpose flour
1 c. nut meal/flour (I used a combo of 3/4 almond to 1/4 hazelnut)
2 heaping teaspoons baking powder
1 teaspoon kosher salt
1/2 c. sugar (scant)
2 very ripe bananas, peeled and mashed
1/2 c. applesauce (no sugar added)
2 eggs, lightly beaten
2 teaspoons vanilla extract
3 tablespoons melted butter
1 c. milk
1/2 cup chocolate chips
1/2 cup chopped walnuts
1/2 cup unsweetened shredded coconut

Preheat oven to 350 F.
Combine dry ingredients in large bowl and stir to mix.
Combine bananas, applesauce, eggs, vanilla, butter and milk in a second smaller bowl and mix thoroughly.
Add wet ingredients to dry and mix, lifting gently from the bottom of the bowl, until combined. Stir in remaining ingredients.
Transfer into greased standard size loaf pan and bake for 45 minutes. Cool in pan on rack for 10 minutes, then remove from pan and continue cooling. It should be ready to slice in about 20 more minutes.
